La Joya is the name of Yermy Predraza’s farm. 

The processing method is extended fermentation washed, a method that brings fruit flavours to the fore. They are calling this concept "Fruta Madura", which is Spanish for ripe fruit. This lot is solely from Yermy, however you will see lots in the future that may also be blends of different producers.

15g coffee grounds to 250g water 

92-94 degrees water 

medium fine grind
